In January 2016, my husband and I started to decrease the amount of meat we consumed in an effort to get a little healthier. However, we still consumed fish and dairy products at that point. We saw some improvements in our health but I wouldn't say that we were at our peak health yet! A few months later we were excited to be expecting our first baby! At this point I decided that I wanted to be at my optimum health! I started to research a lot about nutrition and also watched quite a few documentaries. I learned that a plant-based diet was really the healthiest option. I also learned about the impact of animal products on the environment and it finally clicked for me that we didn't need to harm animals just for food for pleasure because we do not need them nutritionally. I'm not here to debate with anyone, but based on my own research and experiences, I decided that this lifestyle was the best fit for me and my family. This lifestyle gives us a ton of energy and keeps us satisfied! I also used to have very high cholesterol that was controlled by medication.. Now, I have lower cholesterol than I did when I was on the medication and I no longer have to worry about the side effects. I am here to share the recipes I use to nourish our bodies so that others can see how yummy, easy, and beneficial a plant-based diet can be! I hope you find something that sparks your interest and that you will be inspired to make your own plant-based creations!

Something else I want to note.. You do not need a ton of free time to make these recipes and live a plant-based lifestyle! While I am extremely lucky to have a flexible schedule so that I can spend a great amount of my time with Lucy, I am quite a busy person! Well first of all, having a baby takes up A LOT of time! On top of soaking up every single minute with that sweet baby that I can, I am also a doctoral student. I am working on earning my PhD from New York University in the Department of Communicative Sciences and Disorders where I am researching child language and literacy development and disorders. I am also a clinical speech-language pathologist and own a private practice that I run right out of a home office. While doing all of this, I still find the time to make healthy meals for my family so I want you to know that this is do-able! I have to say, I am very lucky and thankful to have an amazing husband who is supportive of all my ventures and who also loves to spend so much of his time with our baby girl! He is a large part of why I am able to balance all of these things and live this lifestyle. It of course, like anything, takes some energy and motivation but the healthier you eat, the more energy you'll have and you won't want to go back to the foods that don't make you feel this good!
