Okay, I can pretty much take zero credit for this yummy pizza! My husband, Jordan, always makes our homemade pizza and I love him for it! In the winter, he bakes it in the oven but during the spring and summer we like it on the grill! Some people put their pizza directly on the grill but we use a pizza stone. We like to load our pizza with a ton of toppings, mostly vegetables of course! We do like to add some vegan sausage. We consider the vegan sausage a "once in awhile" treat because it is a processed food, but like with anything, moderation is key! Some people like to put vegan cheese on their pizza; we don't. I, personally, do not like the taste of vegan cheese and would much rather taste the sauce and veggies. Instead, we use some nutritional yeast for a bit of "cheesiness". If you don't know much about nutritional yeast, don't let the name scare you! It has a nutty flavor and is loaded with B vitamins, which support our immune and nervous systems!
For our veggie toppings, we chose green bell pepper, onion, jalapeño, cherry peppers, basil, and brussel sprouts. You may be thinking it sounds so weird to put brussels on pizza but if you like them, you must try it! It really is very yummy! There's also two options for how you like your veggie toppings. You could just throw them on raw and they'll still be fresh and crunchy when your pizza is done or you can roast them first if you want them soft. We like it both ways but chose to have fresh and crunchy for this pizza!
Once you have your toppings prepped, put the pizza stone on the grill and preheat over high heat. Meanwhile get the dough stretched! Once the stone is hot, lay the dough on top, apply sauce and toppings then let cook for 7-10 minutes. It will look and smell amazing and you will be so excited to dig in! Loaded Grilled Pizza
2 tbs cornmeal
1 package whole wheat/grain pizza dough
1 small jar pizza sauce
1/2 large yellow onion, sliced or chopped*
1 bell pepper, sliced or chopped*
1 jalapeño, sliced
1 cherry pepper, chopped
5-6 Brussels sprouts, chopped*
handful of fresh basil
2 vegan sausage links, crumbled
2 tbs nutritional yeast
*Note: if you want these to be soft toppings on your pizza, you will need to roast them for 20-30 minutes in a 400 degree oven!
1. Prep all your toppings (either chop or chop & roast).
2. Preheat the pizza stone on the grill over high heat for 10 minutes.
3. Sprinkle cornmeal on hot pizza stone. Stretch dough and place on stone.
4. Spread sauce on the dough. Load up the pizza with onions, peppers, brussel sprouts, vegan sausage, and basil. Sprinkle with nutritional yeast.
5. Cook for 7-10 minutes. Remove from heat and serve!
