Tasty Tea Sandwiches

Something about eating tea sandwiches is fun! Maybe it's the fact that they're small or maybe it's just that they usually have flavor combinations different than a typical sandwich, but whatever it is, I like adding this little bit of "fun" whenever I serve brunch! I wanted to come up with one warm and one cool recipe for sandwiches this year to balance each other. I decided to try out caramelized onion & mushroom and roasted red pepper and pesto. They both came out amazing and I will definitely be making them again! I have included both recipes in this blog post below! I hope you enjoy as much as I did!


Note: I had some extra filling for leftover so you could definitely make more sandwiches with these recipes!

Caramelized Onion & Mushroom Tea Sandwich Recipe



14 slices of bread, crust removed

4 yellow onions, sliced

1 package baby bella mushrooms, stems removed and sliced

1-2 tbs vegan butter or olive oil


1. In a large skillet heat butter or oil on high. Add onions.

2. To caramelize onions, let them brown in the pan and stir infrequenlty. Allow them to stick to the pan and but stir them before they burn. If you stir them too often they will not brown. It takes 30 minutes to an hour for them to fully caramelize.

3. When the onions are just about done, add the mushrooms and cook until soft.

4. Remove from heat and add the mixture to 7 slices of bread. Top with another slice and cut diagonally. You can cut diagonally again for even smaller sandwiches!

Roasted Red Pepper and Pesto Tea Sandwich Recipe


14 slices of bread, crust removed

1 jar roasted red peppers, sliced

1/4 cup olive oil

1/2 cup walnuts

2 cups fresh basil, tightly packed

1 cup baby spinach, tightly packed

juice of 1 lemon

2 cloves of garlic

2 tbs nutritional yeast

ground black pepper and pink Himalayan salt to taste


1. To make the pesto, combine oil, walnuts, basil, spinach, lemon, garlic, nutritional yeast, and salt & pepper in food processor.

2. Spread the pesto on 7 slices of bread. Top with roasted red pepper slices and another slice of bread. Cut diagonally. You can cut diagonally again for even smaller sandwiches!
